working on a new wing recipe. Whole wings, baked(normally we deep fry drums and flaps seperated) and coated in hot sauce and a special spice blend (to which the wings would marinate in). I did some in the oven today (375 for 1 1/2 hrs) and they turned out amazing! Look for these soon on the Whistle Stop menu.. We done some small "tailgate" parties at the restaurant and these wings are a take on the one's we served at said parties. I've also got the special bean recipe to go along with it, something that I will probably post soon.

cumin-roasted garbanzo beans with tomatoes and shallots

2 cans garbanzo beans(drained)
2 medium tomatoes(finely diced)
3-4 shallots(thinly sliced)
1 fresh garlic clove(finely chopped)
2 tsp ground cumin
1 tsp black pepper
2 tsp sea salt
1/2 tsp garam masala
1tsp olive oil

preheat oven to 375. in a large cast iron skillet heat over medium flame, add olive oil, garbanzo beans and shallots to pan cook about 5 minutes. add tomatoes, garlic and spices, combine well in pan and put it in the oven for about 25 minutes. serve as a side or a just as delicious and filling veggie meal!(the secret is the garam masala)

green chile burger

green chile sauce (homemade)
diced red tomatoes
mild shredded cheddar cheese
chilpotle seasoning (mexican seasoning)

this burger is inspired by my boss and co-owner of the whistle stop grill Terry Wilson. This is a take on something from his home in Colorado that he dearly loves from one of his favorite restaurants.

so this is the first of many installments of what you may call a blog, and what I'm calling stream of conscience and free flowing ideas that are constantly inside my head and driving me crazy until I put them into some form of medium(i.e this "blog"). basically there will be random recipe ideas, things that creep within after 13 years spent working in kitchens and constantly cooking, always experimenting. I love to cook because I love to eat plain and simple. here's whats lurking within lately.
